We want to continue VSU as a platform for small businesses and supportive shoppers while keeping everyone as safe as possible. It’s our new normal for now. Read on for some specifics and check the awesome menus in our IG story highlights. Lots of new items and a wider price range!

  • Each event showcases a select few rotating vendor faves with special menus for you to pre order, pre pay, and pick up goods from!
  • The next VSU 2GO pick up date will be FRIDAY, JULY 24TH at Pine Box Rock Shop!
  • There’s a limited number of orders we can take to ensure safe n spacious pick ups, so we encourage you to order with a friend! 
  • You’ll be able to request your preferred pick up time window between 12:00- 6:00, and we’ll do our best to accommodate.
  • To meet the order form minimum you must order from atleast 3 of the participating vendors!
  • If your order is accepted you’ll be invoiced afterwards, separately from each vendor you ordered with!
  • No vendors will be on site or in sight, just one VSU rep that will hand over your complete order upon arrival.
  • Yes masks are required for pick ups! 
  • Pine Box Rock Shop has added a NEW menu of cocktail and local beer growlers to the order form! (not incl in the 3 vendor minimum)

As with every other event in NYC, we’re having to rethink the logistics and procedures for the future of VSU! We want to continue as a platform for small businesses and supportive shoppers while keeping everyone as safe as possible. Working with Pine Box Rock Shop, we’ve devised a system to jump back in the game and GET YOU FED.

Here’s the gist..

  • We’re showcasing a select few vendor faves with special menus for you to pre order, pre pay, and pick up goods from!
  • The first VSU 2GO pick up date will be Saturday, May 16th!
  • There’s a limited number of orders we can take to ensure safe n spacious pick ups, so we encourage you to order with a friend! 
  • You’ll be able to request your preferred pick up time and we’ll do our best to accommodate.
  • To meet the order form minimum you must order from atleast 3 of the participating vendors!
  • If your order is accepted you’ll be invoiced afterwards, separately from each vendor you ordered with!
  • No vendors will be on site or in sight on 5/16, just one VSU rep that will hand over your complete order upon arrival.
  • Yes masks are required for pick ups! 
  • Yes anyone with an order for this premiere event will score a ltd ed ‘10 years of VSU’ pin!

We’re hoping to make this a regular event, more frequent than our usual monthly stint, so have no fear if you can’t join this first one! There will be more to come and with a rotating vendor cast. A FAVORITE RECIPE..
Check The Rhyme (green smoothie) this is my favorite smoothie EVER!

1 cup kale
1 cup mango
1/2 cup peach
1.5 inch ginger
1-2 tbsp bee free honey
1.5 cups plant milk
*blend until all flecks of kale are gone (about 4 min)
*if you’re using fresh fruit add a little ice to the mix ENJOY!!

We’re staying focused on the things we can do: for our family, for our community, for our business. We stopped reading every little news article and stopped worrying about the long term as much as we can.
I’ve been contacting a friend every day to check in. It’s too easy to retreat into isolation. Force yourself to stay connected and stay creative.

Try everything! Explore every option! Chances are there isn’t going to be one thing that keeps you going but a raft of several little things that work out for you.

A FAVORITE RECIPE..
Rose Sunshine Sangria –
We’ve been making a ton of these for take out and delivery.

In a 24 oz pitcher, add three shots of brandy. (If you don’t have brandy on hand, any fruit liqueur will do.) the juice from two lemons and a 1/2 cup of berry puree. (Easy recipe below). Add a cup of ginger ale, then pop in your ‘fridge to chill. Don’t worry, the soda is supposed to go a flat. The citric acid in the soft drink “mixes” the cocktail by breaking it down while it chills. Serve over ice and garnish with lemon. I usually halve this with club soda but it’s a wonderful cordial at full strength. Cheers!

Berry Puree: In a sauce pan, bring equal parts raw sugar and water to a simmer, stirring occasionally. When the sugar is dissolved add one equal part of your favorite berry (we use strawberries) and bring to a boil. Boil until fruit is soft – watch it! It boils over easy! Pull from the heat and cover. Once its cool blend it together until no chunks remain. You can store it in the fridge for one week.) Pro tip: Freeze the puree in your ice cube tray then store in a batch in your freezer!

Doing chopped challenges in my own kitchen! Being creative by baking and cooking with ingredients that have been in my kitchen, and trying to do a small productive thing each day— whether that is taking a shower or baking a loaf of bread.

Keep communicating with one another. Things are really scary, especially since food service can’t work from home + earn an income— communicate your needs to the close people in your life, be open to sharing feelings + thoughts + actions, try to help your brain to stop feeling like you are in this alone.

Honestly three way tie— nachos, french fries, + cheesy bread :•)

I’m still figuring it out! I think the best way for me would be to continually sharing my posts, talking about me, and keeping me in mind for orders in May + onward. I think I’ll be doing a raffle for some rewards that you’ll be able to be a part of for a small money contribution. Thank you to everyone who has already reached out!!

A FAVORITE RECIPE..
Basic Vegan Cookies~

1/2 c vegan butter~room temp (or softened coconut oil)
3/4 c sugar
1/4 c nondairy milk
1 t vanilla
1 1/2c flour
1/2 t baking soda
1/2 t salt

Optional add ins— nuts, chocolate chunks, dried fruit, spices, citrus zest. *if adding zest, massage into sugar before adding the sugar to the fat.

Mix fat + sugar till fluffy, with a fork or a mixer if ya got one. Add milk + vanilla, mix till incorporated. Fold in flour, baking soda, salt.

Add in any optional add ins.

Scoop and put on a cookie sheet, chill in the fridge for an hour. Bake for 8-10 minutes, flatten them out if desired. Let cool + eat!

Please help a local animal shelter that is short on supplies.

A FAVORITE RECIPE..
Plate of Comfort

Macaroni salad:
1/2 cup of vegan mayo
1/4 cup vinegar
1tbspn mustard
1 Tbspn agave
1/2 tspn salt
1/2 Tspn black pepper
1/2 red bell pepper diced
3 celery hearts diced
3/4 red onion minced
Shaved or grated carrot

Dressing: Add Mayo, vinegar, mustard, agave, salt and pepper and whisk in small bowl.
Boil pasta in salted water with a tablespoon of olive oil for set amount of time as recommended on package. Once boiled, drain and set aside in a medium bowl. Add vegetables and dressing and mix. Cover and refrigerate for one hour before serving.

Crispy Fried Buttermilk Seitan Nuggets

I used store bought seitan and broke into nugget sized pieces.

Dry Ingredients coating:
Chickpea and all purpose flour about a cup and a half
1/2 tspn salt
1/2 tspn cayenne
1 tspn paprika
1 tspn black pepper
1 tspn garlic powder
1 tspn onion powder
1/2 tspn oregano
1/2 tspn basil
1/4 tspn thyme

Vegan Buttermilk mixture for dredging:
1 cup Creamy planet oat
2 tablespoons white vinegar
1/4 cup Just Egg

Flour and dredge twice. Pan fry about 1 minute and flip for another 1-2 minutes. Pieces should be golden. Place on paper towel to remove excess.
